Low-Carb 3 Ingredient Peanut Butter Cookies

Enjoy these low-carb cookies, packed with protein, antioxidants and delicious flavor! Makes 4 servings.

· 1 cup peanut butter

· 1/2 cup Health Garden’s Classic Monk Fruit Sweetener

· 1 large egg

Preheat oven to 350°F.

Use an electric mixer to reduce the monk fruit sweetener crystals to a fine powder. Add the peanut butter and egg and mix all ingredients until well combined.

Scoop the cookie dough into 1-inch balls and place on a baking sheet lined with parchment paper. Flatten each cookie with a fork to produce the classic crosshatch pattern.

Bake for about 10-15 minutes, or until the edges of the cookies begin browning.

After removing the cookies from the oven, allow them to cool on a wire rack and then indulge in this sweet, guilt-free treat!
